Oh the chocolate ones are so easy – this is a mix-in the pan recipe, but it’s just as easy in a bowl. Cupcakes need just about 15 minutes.
Hurry Up Chocolate Cake (9X9)
1 1/2 c flour
1 c white sugar
3 rounded tbsp cocoa
1 tsp baking powder
1 tsp soda
1/2 tsp salt
1 tsp vanilla
1 teaspoon vinegar
1/2 c margarine or butter, melted (canola works too)
1 c lukewarm buttermilk (or soured milk made by combining 1/4 c lemon juice with regular milk)
Sift dry ingredients (or just mix together) into 9×9 cake pan. Stir well to blend. Bump pan on counter to level off. Make 3 hollows in the mixture with a spoon. Put vanilla in one hole, vinegar in another, and melted fat in 3rd. Over all, pour the buttermilk. Stir until smooth, with no flour showing. Thump on counter to level off. Bake at 350 for 1/2 hour. Cool in pan. Turn out and ice.
