Pirate Cupcakes

Oh the chocolate ones are so easy – this is a mix-in the pan recipe, but it’s just as easy in a bowl. Cupcakes need just about 15 minutes.

Hurry Up Chocolate Cake (9X9)

1 1/2 c flour
1 c white sugar
3 rounded tbsp cocoa
1 tsp baking powder
1 tsp soda
1/2 tsp salt
1 tsp vanilla
1 teaspoon vinegar
1/2 c margarine or butter, melted (canola works too)
1 c lukewarm buttermilk (or soured milk made by combining 1/4 c lemon juice with regular milk)

Sift dry ingredients (or just mix together) into 9×9 cake pan. Stir well to blend. Bump pan on counter to level off. Make 3 hollows in the mixture with a spoon. Put vanilla in one hole, vinegar in another, and melted fat in 3rd. Over all, pour the buttermilk. Stir until smooth, with no flour showing. Thump on counter to level off. Bake at 350 for 1/2 hour. Cool in pan. Turn out and ice.

Easy Chicken Fried Rice

Easy Chicken Fried Rice

Simple and delicious and filling.
You can use rotisserie chicken to make it even faster!

2 eggs
2 – Tbsp water
2 -Tbsp butter
2 -Tbsp vegetable oil
1 large onion, chopped
1 clove garlic, minced
1 (16 oz.) bag frozen peas and carrots, thawed, (optional)
4 cups cooked white rice (make sure rice is cold)
1/4 cup soy sauce
½ tsp. black pepper
2 cups cooked chicken meat, or meat of choice

In a small bowl, beat egg with water. Melt butter in a large skillet over medium-low heat. Add egg and scramble until cooked through. Remove from skillet to a small bowl.

Heat oil in the same pan. Add onion, garlic and the peas and carrots. Saute until the onion is soft. Then add rice, soy sauce, black pepper and chicken. Stir-fry together about 3-5 minutes, until mixture is well combined. Add the eggs; stir to combine.

Impossibly Easy Cheeseburger Pie

Impossibly Easy Cheeseburger Pie

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs

1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.

2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.

3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.

4. Bake about 25 minutes or until knife inserted in center comes out clean.

High Altitude (3500-6500 ft): Bake 30 to 35 minutes.

Recipe: Mini Fruit Pizzas


Spread a creamy filling on a Pillsbury® Ready-To-Bake™ sugar cookie and top with fresh fruit…so easy!


1 (18-oz.) pkg. (20 cookies) Pillsbury® Ready to Bake!™ Refrigerated Sugar Cookies
1 (8-oz.) pkg. cream cheese, softened
2 tablespoons frozen limeade concentrate, thawed
1/2 cup powdered sugar
10 fresh strawberries, quartered
1 kiwi fruit, peeled, cut in half lengthwise and cut into 10 slices
1/2 cup fresh blueberries
1/2 cup fresh raspberries


1. Bake cookies as directed on package. Cool 10 minutes or until completely cooled.

2. Meanwhile, in medium bowl, combine cream cheese, limeade concentrate and powdered sugar; beat until smooth.

3. Spread each cooled cookie with 1 tablespoon cream cheese mixture. Arrange fruit on top of each. Serve immediately, or cover and refrigerate up to 2 hours.

Pecan Pie

Pecan Pie

1 cup light corn syrup
1 cup brown sugar
1/4 teaspoon salt
1/3 cup melted butter
1 teaspoon vanilla
3 large eggs, slightly beaten
1 heaping cup pecan halves
1/2 cup pecans chopped
1 pie shell, unbaked, 9-inch

Combine corn syrup, brown sugar, salt, butter, and vanilla. Add slightly beaten eggs and blend well; stir in pecans. Pour into the unbaked pie shell. Bake in a preheated 350° oven for 45 minutes, or until set. Cool pecan pie and serve with a dollop of whipped cream or vanilla ice cream.

Roasted Red Peppers recipe

Place bell pepper directly on the gas burner cover. Turn heat to high. Char, turning peppers with tongs from time to time. They should be black all over. Transfer to a paper bag and roll up the top. Let steam for about 10 minutes.

Remove from bag. With the back of a knife, scrape the blackened skin off the pepper. Resist the urge to stick the whole thing under running water! It’ll wash away the smoky taste. It’s easier if you divide each pepper into quarters. You have to scrape the seeds and veins off the inside, too. I know, it sucks!

Cut into strips. Drizzle with olive oil and sprinkle with salt. Add minced garlic and/or parsley if you want. Eat with almost anything.
